Yogurt Soup

Serves 4 to 6

This soup, served cold, is perfect to enjoy on a hot day. No only is it refreshing (with basil, mint, and green onions), but it’s good for you too. This soup is a great source of calcium, healthy fats, and antioxidants. Eat up.

Ingredients

3 cups Greek Gods Traditional Plain or Nonfat Plain Greek yogurt

2 cucumbers, finely chopped

2 scallions, green and white parts, finely chopped

2 sprigs fresh basil, finely chopped

2 sprigs fresh mint, finely chopped

1/2 cup chopped dates or raisins

1/4 cup chopped walnuts

Salt and freshly ground pepper to taste

Instructions

Stir the yogurt with a spoon or whisk until smooth, adding a little milk to thin if desired. Stir in the remaining ingredients, reserving some of the chopped herbs for garnish, and refrigerate until ready to serve. Garnish with reserved herbs.
