Spinach and Olive Pesto
Makes about 1 cup

Toss this delicious pesto with the pasta of your choice or use as a bruschetta topping or as a crust for roasted fish.
Ingredients
1 (8-ounce) bag of baby spinach
½ cup pine nuts
3 coves garlic, peeled
¼ cup Parmesan, freshly grated
10 black olives (preferably Nicoise pitted)
¼ cup Lucini® Premium Select Extra Virgin Olive Oil™
Salt and fresh ground pepper to taste
Instructions
Place ingredients into food processor bowl. Pulse until thoroughly mixed about 15 seconds.
