Panzanella (Italian Bread Salad)

A hearty, traditional salad that is a perfect complement to grilled fish.

Ingredients

1 medium-sized loaf Fococcia or day-old Italian bread

1 ½ cups tomatoes, chopped

1 cup red onion, diced

Fresh basil, chopped

1 cup celery, chopped

Lucini® Premium Select Extra Virgin Olive Oil

Lucini® Gran Riserva Balsamico Balsamic Vinegar

Instructions

Cut bread into 1-inch cubes. Add tomatoes, red onion, celery, and basil leaves. Toss with extra virgin olive oil and balsamic vinegar.
