Olive-Blue Cheese Compote
Serves 4 to 6

How could olives get any better? When they’re served with blue cheese of course!
Ingredients
1 (6-ounce) jar pitted olives
½ cup (2 ounces) crumbled blue cheese
¼ cup chopped red onion
2 tablespoons olive oil
2 tablespoons chopped fresh chives
1 tablespoon red wine vinegar
¼ teaspoon cracked black pepper
Instructions
In a medium bowl, combine all ingredients; mix well. Cover, refrigerate and marinate overnight. Bring to room temperature before serving.
