Avocado Roasted Garlic Dip
Makes 2 cups

Ingredients
1 pound California Avocados
1/8 cup lemon juice
1 1/3 garlic heas, roasted and squeezed from skin (See note below)
6 tablespoons garlic, chopped
1/12 cup parsley, chopped
1/6 tablespoon dried oregano
1/4 tablespoon salt
1/4 teaspoon coarsely ground black pepper
Instructions
Roughly mash avocado. (Texture should not be smooth.) Fold remaining ingredients into avocado. Chill 1 hour to marry flavors.
Note: To roast garlic put cloves in a square of foil, drizzle with 1 teaspoon olive oil. Seal foil. Bake at 450°F until garlic is very soft but not brown. Gently squeeze cloves from skin.
